This is an atlas, not a claim that one recipe can represent a province. Every dish has family versions, seasonal versions and arguments attached. Use these concise methods as orientation: taste, ask, compare, and let the local cook have the final word.

The map becomes edible when technique travels: dough is pinched, grain rested, greens fermented, meat turned toward fire.

Adana — Adana kebap

Hand-mince lamb with tail fat and red pepper, press it along a wide skewer and grill over charcoal until the edges catch. Serve with flatbread, sumac onions and şalgam.

Adıyaman — Basalla

Shape fine bulgur and minced meat into small sour meatballs, then simmer them gently with tomato, pepper paste and a bright final squeeze of lemon.

Afyonkarahisar — Haşhaşlı çörek

Roll soft yeasted dough with crushed poppy paste and oil, coil it into layers and bake until the top is deeply golden and the centre still tender.

Ağrı — Abdigör köftesi

Pound lean beef until almost paste-like, season sparingly, form large balls and poach them before serving with buttered rice.

Aksaray — Aksaray tava

Layer cubed lamb, tomato, pepper, garlic and tail fat in a shallow tray; roast slowly until the meat yields and the vegetables collapse into their own sauce.

Amasya — Baklalı dolma

Wrap a filling of cracked wheat, dried broad beans, onion and herbs in vine leaves, then cook low and slow with a little meat for depth.

Ankara — Ankara tava

Brown lamb on the bone, add toasted arpa şehriye and stock, then finish together in the oven so the pasta absorbs the meat’s full flavour.

Antalya — Hibeş

Whisk tahini with lemon, garlic, cumin and water until pale and spoonable. Eat as a sharp meze with warm bread rather than treating it as a dip on the side.

Ardahan — Evelik aşı

Cook dried dock leaves with cracked wheat, pulses and onion; finish the earthy soup with yogurt or a spoon of melted butter and dried mint.

Artvin — Silor

Bake tightly rolled strips of thin yufka until crisp, soak lightly with stock, then cover with garlicky yogurt and browned butter.

Aydın — Çingene pilavı

Fold crumbled white cheese through chopped tomato, pepper, cucumber, parsley and onion. Dress with olive oil and eat immediately, while every texture is distinct.

Balıkesir — Höşmerim

Cook fresh unsalted cheese with semolina, sugar and egg yolk over low heat until glossy, elastic and the colour of warm butter.

Bartın — Pumpum çorbası

Whisk fine cornmeal into hot stock, add milk and garlic, and finish with crisp cubes of bread or bacon for contrast.

Batman — Perde pilavı

Pack spiced rice, chicken, almonds and currants inside a buttered pastry-lined pot; bake, turn out and cut through the bronzed shell at the table.

Bayburt — Galaçoş

Layer torn village bread with garlicky yogurt and a warm lentil-onion sauce, then carry browned butter across the top.

Bilecik — Nohutlu tavuklu mantı

Bake small folded pasta parcels, then ladle over chicken-and-chickpea broth. Serve with yogurt and pepper butter.

Bingöl — Gömme

Enclose a savoury filling inside a thick round of dough and bake slowly; tear it open while hot and dress the crumb with butter.

Bitlis — Çorti aşı

Simmer fermented cabbage with cracked wheat and meat until sour, soft and sustaining — a winter pot built to improve overnight.

Bolu — Mengen pilavı

Cook rice with mushrooms, tomato, onion, herbs and small pieces of meat; rest it carefully so the grains stay separate.

Burdur — Burdur şiş

Season minced goat or beef lightly, form it onto short skewers and grill. Serve in pide with roasted pepper; the meat, not spice, should lead.

Bursa — İskender kebap

Lay toasted pide under thin döner, spoon over tomato sauce and browned butter, and place thick yogurt beside it so each bite can be balanced.

Çanakkale — Peynir helvası

Cook fresh unsalted cheese with flour or semolina and sugar until it stretches and turns golden; serve warm, before the texture tightens.

Çankırı — Yaren güveci

Slow-cook lamb with shallots, tomato, pepper and garlic in an earthenware pot until the sauce becomes dark and concentrated.

Çorum — İskilip dolması

Steam rice in a cloth above long-cooked beef so it takes on the broth gradually; serve the rice first and the meat generously over it.

Denizli — Denizli kebabı

Roast lamb slowly in a wood-fired oven with little more than salt, then eat it with pide by hand while the edges are still crisp.

Diyarbakır — Kaburga dolması

Fill a lamb rib cage with spiced rice, almonds and currants, sew it closed and cook until both the meat and filling are deeply perfumed.

Düzce — Haluj

Fill soft dough half-moons with potato or cheese, boil until tender and dress with garlicky yogurt and hot pepper butter.

Edirne — Tava ciğer

Slice liver paper-thin, dust lightly with flour and fry in very hot oil. Serve at once with dried red peppers and raw onion.

Elazığ — Harput köftesi

Knead fine bulgur with minced meat and herbs, shape small balls and simmer in a tomato-pepper broth until tender.

Erzincan — Ekşili çorba

Bring lentils, chickpeas, wheat and small meatballs together in a tamarind-or-sumac sharpened broth; finish with mint.

Erzurum — Cağ kebabı

Marinate lamb with onion and salt, stack it on a horizontal spit and carve each browned layer onto small skewers.

Eskişehir — Çibörek

Seal a loose filling of minced meat, onion, water and pepper inside thin half-moons of dough; fry until blistered and eat dangerously hot.

Gaziantep — Yuvalama

Roll rice flour and meat into tiny pearls, cook with chickpeas and lamb, then temper with yogurt and finish with dried mint butter.

Giresun — Fasulye diblesi

Cook sliced green beans with onion and rice in olive oil until the grains are tender and the beans still hold their green character.

Gümüşhane — Siron

Arrange baked yufka spirals in a tray, moisten with broth, add yogurt and finish with butter browned to a hazelnut aroma.

Hakkâri — Keledoş

Cook wheat, chickpeas and greens together, fold in kurut or strained yogurt and crown the bowl with slow-cooked meat.

Hatay — Tepsi kebabı

Press minced meat, pepper, onion, garlic and parsley into a round tray, cover with tomato and roast until caramelised at the rim.

Iğdır — Bozbaş

Simmer lamb, chickpeas, potato and onion with saffron or turmeric until the broth is rich and the meat falls apart at a spoon.

Isparta — Kabune pilavı

Layer shredded beef and softened onion beneath rice, cook in broth, then invert so the savoury base becomes the top.

İstanbul — Zeytinyağlı yaprak sarma

Wrap vine leaves around rice, onion, currants, pine nuts and warm spice; braise with olive oil and lemon and serve completely cool.

İzmir — Boyoz

Rest an oil-enriched dough, stretch it into thin layers, roll and fold, then bake the rounds at high heat until flaky outside and chewy within.

Kahramanmaraş — Tirşik çorbası

Ferment wild arum with yogurt, flour and cracked wheat before a long simmer; careful preparation transforms a difficult leaf into a prized sour soup.

Karabük — Perohi

Fill small dough parcels with strained yogurt or cheese, boil and serve under melted butter and toasted walnuts.

Karaman — Batırık

Rub fine bulgur with tomato and pepper paste, tahini and crushed nuts; loosen with cool water for the soupy version or serve compact with herbs.

Kars — Hangel

Boil diamond-cut sheets of dough, spread with garlicky yogurt and scatter deeply browned onions over the top.

Kastamonu — Banduma

Dip strips of village yufka in turkey or chicken stock, layer them with pulled meat and walnuts, then pour over hot butter.

Kayseri — Mantı

Fill tiny dough squares with spiced mince, pinch closed and boil; serve with garlicky yogurt, tomato butter, sumac and mint.

Kırıkkale — Alazlama

Toast thin yufka over flame, brush with butter and fold around a simple cheese, herb or minced-meat filling.

Kırklareli — Kuzu kapama

Roast young lamb slowly with spring onions, greens and a little stock until the meat is soft and the surface burnished.

Kırşehir — Çullama

Coat pieces of cooked chicken in an egg-and-flour batter, fry until crisp and serve with the reduced cooking broth.

Kilis — Oruk

Knead fine bulgur with meat and pepper paste, wrap it around an onion-and-mince filling and fry or bake until crisp.

Kocaeli — Pişmaniye

Pull repeatedly folded sugar around roasted flour and butter until it becomes thousands of fine, delicate strands.

Konya — Etli ekmek

Spread a thin layer of minced meat, tomato, pepper and onion across very long dough and bake directly on a hot stone floor.

Kütahya — Cimcik

Pinch small pieces of pasta dough into bow-like shapes, boil and dress with garlicky yogurt and pepper butter.

Malatya — Kağıt kebabı

Roast small pieces of lamb with tomato, pepper and garlic on paper in a hot oven until the juices reduce and the edges colour.

Manisa — Manisa kebabı

Wrap grilled meatballs and tomato sauce in soft flatbread, add yogurt and finish with browned butter at the table.

Mardin — İkbebet

Form a fine bulgur shell around spiced minced meat, onion and walnuts; boil gently and serve warm with lemon.

Mersin — Tantuni

Boil finely chopped beef, then flash it on a metal griddle with cottonseed oil, pepper and tomato; roll in lavash with parsley and onion.

Muğla — Çıntar kavurması

Clean saffron milk-cap mushrooms, sauté hard with olive oil and onion, and finish with garlic and lemon once their liquid has cooked away.

Muş — Muş köftesi

Wrap a bulgur-and-meat shell around a rich minced filling, shape it generously and simmer until the outer layer is tender.

Nevşehir — Nevşehir tava

Roast lamb with tomato, pepper, garlic and tail fat in a shallow clay dish until the vegetables become the sauce.

Niğde — Mangır çorbası

Cook tiny square-cut pasta with lentils or chickpeas in a tomato broth and finish with mint and pepper butter.

Ordu — Melocan kavurması

Blanch the tender tips of smilax, then sauté with onion and olive oil; add egg only if the table asks for something richer.

Osmaniye — Tirşik

Ferment and long-cook wild arum with yogurt, flour and cracked wheat, respecting the traditional preparation that makes the leaf safe and savoury.

Rize — Muhlama

Cook cornmeal in butter, add water and local melting cheese, then stir until the surface shines and long threads follow the spoon.

Sakarya — Islama köfte

Siirt — Perde pilavı

Simmer wheat and lentils in a preserved yogurt base, stirring steadily; finish with dried mint and onion cooked in butter.

Şanlıurfa — Şıllık

Layer very thin crêpes with walnuts, cut into diamonds and soak lightly with warm syrup before serving.

Şırnak — Kutlık

Fill a firm bulgur shell with seasoned meat, shape into oval dumplings and boil gently; serve with butter and pepper.

Tekirdağ — Tekirdağ köftesi

Knead minced beef with bread, onion and cumin until elastic, rest overnight, shape into fingers and grill.

Tokat — Tokat kebabı

Thread lamb, potato, aubergine, tomato, pepper and garlic vertically and roast so every ingredient bastes the one below.

Trabzon — Kuymak

Toast cornmeal in butter, add water and Trabzon cheese, then stir over low heat until molten and stretching.

Tunceli — Patila

Roll thin rounds of dough, fill with herbed cheese or potato, cook on a dry sac and brush with butter.

Uşak — Ciğerli bulgur

Sauté diced liver quickly, fold through tomato-rich bulgur pilaf and rest so the grains absorb the pan juices.

Van — Keledoş

Bring wheat, chickpeas, greens and meat together, then enrich the pot with kurut for its unmistakable cultured tang.

Yalova — Yaprak pidesi

Stretch dough thin, scatter with cheese, herbs or mince, fold loosely like a leaf and bake until the edges crackle.

Yozgat — Arabaşı

Cook a hot peppered poultry soup and serve it with cool cubes of firm flour paste, swallowing each spoonful without chewing the dough.

Zonguldak — Beyaz baklava

Layer very thin pastry with walnuts and clarified butter, bake without taking on deep colour, then add a light syrup.
